Peanut Butter No Bake Cookies!

Peanut Butter “No-Bake” Cookie recipe as requested! We’ve always called these simply “no bakes”. 

I brought these on my trip to an unbridged island (vlog located here: http://www.youtube.com/watch?v=xig1CGRoBlM&feature=plcp). 

They were perfect for bringing with a lot of people because they’re very rich, so even though people loved them, they don’t disappear all at once because you can’t eat too many at once! They are also great for such things because they last several days unlike other cookies which go stale. 

For bringing camping or road tripping etc., I would double this recipe. 

2 cups sugar

1/4 cup butter or margarine

1/2 cup milk (regular, soy, or whatever is probably fine) 

1 cup peanut butter

1 teaspoon vanilla

3 cups rolled oats (old fashioned is preferred to quick cook)

1. In a saucepan, combine sugar, butter, and milk. 

2. Bring to a ROLLING boil and boil for 1 minute. 

3. Remove from heat and stir in peanut butter and vanilla until peanut butter melts. 

4. Stir in oats. 

5. For cookie-shaped ones, drop spoonfuls onto wax paper (I used aluminum foil because I didn’t have wax paper) or for ones like I made, line a casserole dish with wax paper and pour mixture into dish. 

6. Cool in fridge.

7. Remove from pan and cut into squares. 8. (optional) - melt chocolate chips in a plastic (zip loc) bag UNSEALED in the microwave. Snip a TINY corner and drizzle over (cooled) cookies to make people think you’re a master chef.
